Porodica Pu\u0111a se specijalizovala za proizvodnju tvrdog livanjskog sira od kravljeg, ov\u010dijeg ili mje\u0161avine ova dva mlijeka. Kolut sira prirodno sazrijeva ispod sopstvene kore najmanje 60 dana i robusnog je ukusa koji mo\u017ee biti blago pikantan. Receptura je stigla u livanjski kraj u vrijeme austrougarske vladavine i bila je prilago\u0111ena ukusu plemstva.<\/p>\r\n\r\n\r\n\r\n<h2 style=\"font-weight: 400;\"><strong>\u201eMoj otac je oduvijek sanjao da pro\u0161iri posao, da imamo malu komercijalnu mljekaru. Moj brat i ja smo odlu\u010dili da ostvarimo taj njegov san.\u201c<\/strong><\/h2>\r\n\r\n<p style=\"font-weight: 400;\"><strong>Od doma\u0107eg sira do velikog preduze\u0107a<\/strong><\/p>\n<p style=\"font-weight: 400;\">Tomislavovi baba i djed su proizvodili sir u malim koli\u010dinama u svom podrumu. Sedamdesetih godina odlu\u010dili su da komercijalizuju ovaj proizvod i prodaju ga u turisti\u010dkom regionu du\u017e Jadranske obale. Iako koli\u010dine nisu bile velike, prodaja je bila dovoljno dobra da se porodica od toga izdr\u017eava. Tomislavov otac je nastavio ovu tradiciju, a Tomislav mu je pomagao.<\/p>\n<p style=\"font-weight: 400;\">\u201eMoj otac je oduvijek sanjao da pro\u0161iri posao, da imamo malu komercijalnu mljekaru. Moj brat i ja smo odlu\u010dili da ostvarimo taj njegov san\u201c, ka\u017ee Tomislav.<\/p>\n<p style=\"font-weight: 400;\">Mljekara Pu\u0111a Eko sir osnovana je 2003. godine i od tada raste. Mljekara danas proizvodi desetak razli\u010ditih vrsta sira, a dobitnik je niza me\u0111unarodnih nagrada za kvalitet, od kojih je najzna\u010dajnija zlatna medalja sa Me\u0111unarodnog sajma sira u Austriji 2014. godine.<\/p>\n<p style=\"font-weight: 400;\">Preduze\u0107e Pu\u0111a se 2019. godine, vo\u0111ena idejom modernizacije proizvodnog procesa i ja\u010danja dugoro\u010dne pozicije mljekara na doma\u0107em i stranom tr\u017ei\u0161tu, odazvala javnom konkursu za dodjelu bespovratnih sredstava objavljenom u okviru EU4Business projekta, koji finansiraju Evropska unija i njema\u010dka vlada, a sprovode ga Program za razvoj Ujedinjenih nacija (UNDP), Me\u0111unarodna organizacija rada (ILO) i njema\u010dka organizacija za razvojnu saradnju GIZ. Zahvaljuju\u0107i projektu EU4Business, mljekara je zamijenila zastarele ba\u010dve za sir sa ve\u0107im, savremenim ba\u010dvama, nabavila ma\u0161ine za sje\u010denje i mjerenje i nove police u prostorijama za sazrijevanje i instalirala sisteme za odr\u017eavanje mikroklime u mljekari. Gra\u0111evinski radovi tako\u0111e su doprinijeli pobolj\u0161anju ukupnog kvaliteta proizvodnog procesa.<\/p>\n<p style=\"font-weight: 400;\">Ukupna vrijednost ove investicije iznosila je preko 380.000 eura, od \u010dega je Evropska unija obezbijedila gotovo 150.000 u bespovratnim sredstvima. Savremena oprema je pobolj\u0161ala kvalitet proizvoda i proces rada, smanjila tro\u0161kove proizvodnje i doprinijela pove\u0107anju produktivnosti. \u201eSavremena tehnologija je gre\u0161ke svela na minimum, \u0161to nam je bitno u smislu stalnosti kvaliteta. Jedna stvar koju smo odmah vidjeli je da sa novom opremom imamo ve\u0107u iskori\u0161\u0107enost mlijeka, \u0161to zna\u010di da danas dobijamo vi\u0161e sira sa istom koli\u010dinom mlijeka. To je sve doprinijelo da se na\u0161a tr\u017ei\u0161na konkurentnost pobolj\u0161a\u201c, ka\u017ee Tomislav. Pobolj\u0161anja postignuta kroz EU4Business projekat tako\u0111e zna\u010de nove mogu\u0107nosti za pro\u0161irenje proizvodnje i promocije sira van granica Bosne i Hercegovine.<\/p>\r\n\r\n<h2 style=\"font-weight: 400;\"><strong>\u201eLjudi su na\u0161a najve\u0107a vrijednost. Sa novim ma\u0161inama na\u0161i radnici imaju bolje uslove za rad i mogu br\u017ee i lak\u0161e da rade svoj posao.\u201c<\/strong><\/h2>\r\n\r\n<p style=\"font-weight: 400;\"><strong>O projektu<\/strong><\/p>\n<p style=\"font-weight: 400;\">EU4Business\u00a0je projekat EU koji ima za cilj ja\u010danje kapaciteta Bosne i Hercegovine za ekonomski rast i zapo\u0161ljavanje podsticanjem konkurentnosti i inovacija u odabranim sektorima. Raspola\u017ee bud\u017eetom od 16,1 miliona eura: 15 milionaeura finansira Evropska unija, a 1,1 milion eura Savezna Republika Njema\u010dka.<\/p>\n<p style=\"font-weight: 400;\">EU4Business je dio Strategije lokalnog razvoja \u2013 Programa lokalne samouprave i ekonomskog razvoja u Bosni i Hercegovini Njema\u010dkog saveznog ministarstva za ekonomsku saradnju i razvoj (BMZ).<\/p>\r\n\r\n<p style=\"font-weight: 400;\">Skoro 40 ljudi radi u mljekari, uklju\u010duju\u0107i sedam radnika koji su dobili posao zahvaljuju\u0107i investiciji EU4Business. S ve\u0107im brojem radnika pove\u0107ala se i proizvodnja, a obezbije\u0111ena je i bolja kontrola kvaliteta proizvoda. Kako ka\u017ee Tomislav: \u201eLjudi su na\u0161a najve\u0107a vrijednost.
