Porodica Pu\u0111a\u00a0 se specijalizovala za proizvodnju livanjskog sira koji je tvrdi sir od kravljeg ili ov\u010djeg mlijeka, ili mje\u0161avine ovih vrsta mlijeka. Sir, koji je u obliku kota\u010da, prirodno sazrijeva ispod svoje kore najmanje 60 dana i ima sna\u017ean ukus koji mo\u017ee biti blago pikantan. Ovaj recept iz Livanjskog podru\u010dja je spravljen tako da bi odgovarao ukusu carskog plemstva u vrijeme austrougarske vladavine.<\/p>\r\n\r\n\r\n\r\n<h2 style=\"font-weight: 400;\"><strong>\u201eMoj otac je oduvijek sanjao da se na\u0161 posao pove\u0107a i da imamo malu mljekaru. Moj brat i ja smo odlu\u010dili da ostvarimo taj san.\u201d<\/strong><\/h2>\r\n\r\n<p style=\"font-weight: 400;\"><strong>Od zanatskog sira do velike kompanije<\/strong><\/p>\n<p style=\"font-weight: 400;\">Tomislavovi baka i djed su proizvodili sir u malim koli\u010dinama u svom podrumu. Sedamdesetih godina pro\u0161log vijeka odlu\u010dili su komercijalizovati ovaj proizvod i prodavati ga u turisti\u010dkoj regiji du\u017e jadranske obale. Iako koli\u010dine sira nisu bile velike, prodaja je bila dovoljno dobra da se zara\u0111uje za \u017eivot porodice. Tomislavov otac je nastavio ovu tradiciju, a Tomislav mu je pri tom pomogao.<\/p>\n<p style=\"font-weight: 400;\">\u201eMoj otac je oduvijek sanjao o tome da se na\u0161 posao pove\u0107a i da imamo malu mljekaru. Moj brat i ja smo odlu\u010dili da ostvarimo taj san,\u201d &#8211; ka\u017ee Tomislav.<\/p>\n<p style=\"font-weight: 400;\">Mljekara Eko sir Pu\u0111a osnovana je 2003. godine i od tada raste. Danas se u mljekari proizvodi desetak razli\u010ditih vrsta sireva, a ona je dobitnik niza me\u0111unarodnih nagrada za kvalitet, me\u0111u kojima je i zlatna medalja sa Me\u0111unarodnog sajma sireva odr\u017eanog u Austriji 2014. godine.<\/p>\n<p style=\"font-weight: 400;\">U \u017eelji da modernizuje proizvodni proces i da obezbijedi mljekari dugoro\u010dno mjesto na doma\u0107em i stranom tr\u017ei\u0161tu, Pu\u0111asova kompanija se 2019. godine prijavila na javni poziv za dodjelu bespovratnih sredstava. Taj poziv je objavljen u okviru projekta EU4Business koji finansira Evropska unija i Njema\u010dka vlada, a implementiraju ga Program Ujedinjenih nacija za razvoj (UNDP), Me\u0111unarodna organizacija rada (ILO) i Njema\u010dka organizacija za razvojnu saradnju GIZ. Zahvaljuju\u0107i projektu EU4Business, mljekara je zamijenila zastarjelu burad za sir sa ve\u0107im i modernijim, nabavila ma\u0161ine za rezanje i vaganje i nove police u pogonima za zrenje, te instalirala sisteme za odr\u017eavanje mikroklime u mljekari. Gra\u0111evinski radovi su tako\u0111er doprinijeli pobolj\u0161anju ukupnog kvaliteta proizvodnog procesa u mljekari.<\/p>\n<p style=\"font-weight: 400;\">Ukupna vrijednost ove investicije iznosila je preko 380.000 \u20ac, od \u010dega je Evropska unija obezbijedila grant sredstva u iznosu od 150.000 \u20ac. Savremena oprema je pobolj\u0161ala tok i kvalitet rada, smanjila tro\u0161kove proizvodnje i doprinijela pove\u0107anju produktivnosti. \u201eSavremena tehnologija je svela gre\u0161ke na minimum \u0161to nam je va\u017eno u smislu kontinuiteta kvaliteta. Odmah smo uo\u010dili da nova oprema obezbje\u0111uje bolje iskori\u0161tenje mlijeka, \u0161to zna\u010di da danas dobijamo vi\u0161e sira sa istom koli\u010dinom mlijeka. Zahvaljuju\u0107i tome, na\u0161a tr\u017ei\u0161na konkurentnost je sada pobolj\u0161ana\u201d, ka\u017ee Tomislav. Pobolj\u0161anja ostvarena kroz EU4Business projekat otvorila su i nove prilike za pro\u0161irenje proizvodnje i plasmana sira van granica Bosne i Hercegovine.<\/p>\r\n\r\n<h2 style=\"font-weight: 400;\"><strong>\u201cLjudi su na\u0161e najve\u0107e bogatstvo. Sa novim ma\u0161inama na\u0161i radnici imaju bolje uslove za rad i mogu br\u017ee i lak\u0161e da rade svoj posao.\u201d<\/strong><\/h2>\r\n\r\n<p style=\"font-weight: 400;\"><strong>O projektu<\/strong><\/p>\n<p style=\"font-weight: 400;\">EU4Business je projekat EU koji ima za cilj ja\u010danje kapaciteta Bosne i Hercegovine za ekonomski rast i zapo\u0161ljavanje podsticanjem konkurentnosti i inovativnosti u odabranim sektorima. Projekat ima bud\u017eet od 16,1 milion eura: 15 miliona eura finansira Evropska unija i 1,1 milion eura Savezna Republika Njema\u010dka.<\/p>\n<p style=\"font-weight: 400;\">EU4Business je dio Strategije lokalnog razvoja \u2013 Programa lokalne samouprave i ekonomskog razvoja u Bosni i Hercegovini Njema\u010dkog Federalnog ministarstva za ekonomsku saradnju i razvoj (BMZ).<\/p>\r\n\r\n<p style=\"font-weight: 400;\">U mljekari radi otprilike 40 radnika, uklju\u010duju\u0107i i sedam radnika koji su zaposleni u njoj zahvaljuju\u0107i investiciji EU4Business. Novi zaposleni su pove\u0107ali nivo proizvodnje, ali i osigurali bolju kontrolu kvaliteta proizvoda. Da citiramo Tomislava: \u201eLjudi su na\u0161e najve\u0107e bogatstvo.
